This salad is delicious in addition to being beautiful! Shrimp, oranges, avocado, cucumber and rice noodles to name just a few of the ingredients that make the Sunkist Moro Orange, Shrimp and Avocado Salad absolutely delectable! The dressing in itself is wonderful with the orange, lime mint and tamarind. It is a must try!


  • 2 Sunkist® Moro oranges, skinned, seeded and sliced into 8 pinwheels, then halved
  • 8 large sized shrimp, cooked, shelled, deveined and sliced in half length-wise
  • 4 oz. thin rice noodles*
  • 1/2 of an avocado, peeled and thinly sliced
  • 2 scallions, sliced on the bias
  • 1 small cucumber, peeled, halved, seeded and sliced into half moons
  • 1 large carrot, peeled and cut into small matchsticks
  • Cilantro and/or basil leaves for garnish (optional)

  • Dressing:
  • 1 Sunkist® lime, juiced
  • 1 Sunkist® moro orange, juiced
  • 1 Tbsp. tamarind pulp, from 1-2 fresh tamarinds*
  • 1 Tbsp. sugar
  • 1 garlic clove
  • 2 Tbsp. fish sauce
  • 2 green onions, chopped
  • 1/2 cup peanuts, toasted
  • 1/4 cup fresh cilantro
  • 6 mint leaves
  • 1 tsp. ground black pepper
  • 1 tsp. Thai chili, minced (optional for added heat)

    *Available in some supermarkets or Asian specialty markets.

Instructions: (Makes 4 servings)

  • Dressing: Combine all dressing ingredients in a food processor, blend until well combined (approximately 30 seconds). Taste and adjust seasoning if necessary.
  • Cook the rice noodles according to the package directions, drain and cool. In a large Mixing bowl, add the rice noodles, sliced cucumber, scallions, carrots, and shrimp. Add enough dressing to evenly coat the noodles.

  • To Serve: Divide the tossed noodles among four plates, evenly distribute orange slices and avocado. Garnish each plate with the cilantro and basil leaves and serve.
