These sweet, moist muffins scented with cinnamon, ginger, and cloves each provide a half-serving of fruit from the Moro oranges and golden raisins and healthy fats from the canola oil and walnuts. These muffins are great to have on hand for a quick, easy breakfast or a satisfying snack.

Ingredients:

  • Zest from 1 Sunkist® moro orange (about 1 tablespoon)
  • 3 Sunkist® moro oranges, peeled
  • 1/2 cup packed light brown sugar
  • 1/3 cup canola oil
  • 2 eggs
  • 1/2 cup buttermilk
  • 1/2 cup walnuts, chopped
  • 3/4 cup golden raisins
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/4 cloves

    Streusel Topping:
  • 1 1/2 Tbsp. melted butter
  • 1/4 cup brown sugar
  • 3 Tbsp. all-purpose flour
  • 1/4 walnuts, finely chopped
  • 1/2 tsp. cinnamon

Instructions: (Makes 12 servings)

  • Preheat oven to 400 F.
  • Combine the orange zest and peeled oranges in a food processor or blender, and blend until a smooth sauce has been created. Add the brown sugar, canola oil, eggs, and buttermilk and blend well. Pour this mixture into a medium mixing bowl, add the walnuts and raisins, and stir well.
  • In a large mixing bowl, combine the flours, baking powder, baking soda, salt, cinnamon, ginger, and cloves. Add the liquid mixture and stir just until the flour has been incorporated into the batter.
  • Spoon batter into muffin tins, filling each muffin tin about with about cup of batter. You can use a cup measuring cup to do this.
  • Prepare the streusel topping in a small mixing bowl by combining the melted butter, brown sugar, flour, walnuts, cinnamon, and salt. Use a fork to stir the mixture. The topping should be crumbly. Sprinkle a generous teaspoon of this mixture on top of each muffin.
  • Bake muffins for 18 minutes. Remove the muffins from the pan and cool on a wire rack. Serve warm.
