This is a refreshing and delicious salad! This Sunkist Ojai Pixie Tangerine and Peanut Soba Noodle Salad is made with Soba noodles which are high in both fiber and protein. The Pixies are so sweet, easy to peel and segment. Paired with the spicy peanut dressing you have a dish that is sure to become one of your favorites!
Ingredients:

For the salad:

- 8 oz. package cooked buckwheat soba noodles, rinsed and chilled

Sunkist® Ojai Pixies, peeled and segmented

scallions, thinly sliced

cups
sugar snap peas, cut in half on the bias

cup
chopped cilantro

Tbsp.
toasted peanuts, chopped

For the dressing:

cup
Sunkist® lemon juice (approximately 2 lemons)

1/3
cup
peanut butter
-

Tbsp.
toasted sesame oil

Tbsp.
soy sauce

tsp.
chopped fresh ginger

¼
tsp.
chili flakes
Instructions: (Makes 4 servings)

Dressing: Place the peanut butter in a medium sized mixing bowl. Whisk in the lemon juice, sesame oil and soy sauce. Add the ginger and chili flakes. Check for seasoning.

Salad: In a large mixing bowl, mix together all the ingredients for the salad. Slowly drizzle in the dressing and toss to coat.

To Serve: Divide the salad amongst four serving bowl and serve.
