This wonderfully rich glaze makes an elegant, quick dinner to serve to guests. Sunkist Wine Glazed Chicken is delicious, try serving on top of hot cooked rice and spoon sauce over the top.


  • 4 chicken drumsticks with thighs attached

  • Marinade:
  • 3 cups red wine, preferably Pinot Noir
  • 1/2 cup sugar
  • 1 medium shallot, finely chopped
  • 2 cloves garlic, peeled and smashed
  • 2 tsp. rosemary, chopped
  • 2 tsp. thyme, chopped
  • Kosher salt and freshly ground black pepper

  • Sauce:
  • 1 Tbsp. olive oil
  • 4 slices bacon, chopped
  • 1/2 cup onion, diced
  • 1/2 carrot, diced
  • 1/2 stalk celery, diced
  • 1/2 cup Sunkist® black seedless grapes, halved
  • 1/2 cup Sunkist® seedless red grapes, halved

  • Preparation: Heat oven to 400 degrees.

Instructions: (Makes 4 servings)

  • Marinade: Bring wine, sugar, shallot, garlic, rosemary, thyme, 1 1/2 tsp. kosher salt and 1/2 tsp. pepper to a boil in medium saucepan. Simmer over medium low heat until thickened and reduced to 1 cup (about 20 minutes). Let cool completely. Pour wine mixture into a medium bowl. Add the chicken pieces, cover and marinate for 1 hour.
  • Cover a baking sheet with foil. Place chicken on the sheet skin side up, reserving marinade. Roast the chicken until cooked through (about 30 to 40 minutes).
  • Sauce: In a medium skillet over medium heat, add 1 Tbsp. olive oil. Add the bacon, onions, carrots and celery and cook until tender and slightly caramelized (about 8 to 10 minutes). Season well with salt and peppper. Add the reserved marinade and bring to a simmer. Add the grapes and cook until tender (about 5 minutes). Add the chicken and gently toss to coat. Serve the chicken with the sauce spooned over the top.
