A wonderfuly delicious appetizer, Waikiki Sunkist Lemon-Ginger Ahi Tuna Poke is sure to please the more adventurous of seafood lovers. The use of low sodium soy sauce and lemon make this a great Sunkist S’alternative™
Ingredients:

sushi-grade ahi tuna

Tbsp.
freshly squeezed Sunkist® lemon juice

Tbsp.
low sodium soy sauce

Tbsp.
sesame oil

Tbsp.
sweet yellow onion, finely chopped

¾
tsp.
ginger, finely grated

Scant 1/4 tsp. red chili flakes

Tbsp.
sesame seeds, toasted

mesclun mix or baby lettuce

Instructions: (Makes 4 servings)

Cut tuna into approximately 1/2" cubes and place in a non-metallic bowl.

In a second smaller bowl, mix together lemon juice, low sodium soy sauce, sesame oil, onion, ginger and chili flakes.

Pour over cubed tuna and gently mix until coated. Add toasted sesame seeds, toss to combine. Cover and refrigerate for at least one hour to allow flavors to blend.

To Serve: Place a handful of mesclun mix or baby lettuce into the bottom of a martini glass. Add a generous scoop of poke and garnish with a lemon wedge.
