A wonderfuly delicious appetizer, Waikiki Sunkist Lemon-Ginger Ahi Tuna Poke is sure to please the more adventurous of seafood lovers. The use of low sodium soy sauce and lemon make this a great Sunkist S’alternative™

Ingredients:

  • 1 lb. sushi-grade ahi tuna
  • 2 Tbsp. freshly squeezed Sunkist® lemon juice
  • 1 Tbsp. low sodium soy sauce
  • 1 Tbsp. sesame oil
  • 2 Tbsp. sweet yellow onion, finely chopped
  • 3/4 tsp. ginger, finely grated
  • Scant 1/4 tsp. red chili flakes
  • 1 Tbsp. sesame seeds, toasted
  • 2 oz. mesclun mix or baby lettuce
  • 4 Sunkist® lemon wedges

Instructions: (Makes 4 servings)

  • Cut tuna into approximately 1/2" cubes and place in a non-metallic bowl.
  • In a second smaller bowl, mix together lemon juice, low sodium soy sauce, sesame oil, onion, ginger and chili flakes.
  • Pour over cubed tuna and gently mix until coated. Add toasted sesame seeds, toss to combine. Cover and refrigerate for at least one hour to allow flavors to blend.

  • To Serve: Place a handful of mesclun mix or baby lettuce into the bottom of a martini glass. Add a generous scoop of poke and garnish with a lemon wedge.
