This is one delicious cake. Western Golden Fruitcake is wonderful with the taste of orange juice and zest in addition to candied cherries and pineapple.


  • 1 cup butter or margarine
  • 2 cups sugar
  • 4 eggs
  • 4 cups flour
  • 1 1/2 tsp. baking soda
  • 1 cup buttermilk
  • 1/2 cup Sunkist® fresh squeezed orange juice
  • 2 cups pecan or walnut halves
  • 1 package (8 oz.) dates, chopped
  • 8 oz. candied cherries, halved
  • 8 oz. candied pineapple chunks
  • 2 Sunkist® oranges, grated peel

  • Fresh Orange or Lemon Glaze:
  • 1 cup confectioners sugar
  • 1 tsp. Sunkist® lemon or orange peel
  • 1 1/2 to 2 Tbsp. Sunkist® lemon or orange juice

  • Preparation: Preheat oven to 300 degrees.

Instructions: (Makes 24 servings)

  • In a large bowl, cream together butter and sugar. Beat in eggs one at a time. Sift together flour and baking soda and add to creamed mixture alternately with buttermilk and orange juice, beating until smooth. Stir in nuts, dates, cherries, pineapple and orange peel.
  • Divide batter, spoon 7 1/2 cups into a well greased 10 inch Bundt or tube pan and spoon remaining 2 1/2 cups into well greased small loaf pan. Bake both cakes at 300 degrees for 2 hours or until toothpick inserted in center comes out clean.
  • Cool 10 minutes, remove from pans and cool on wire racks. Drizzle cakes with Fresh Orange or Lemon Glaze and garnish with nut halves, if desired.
  • Fresh Orange/Lemon Glaze: In a small bowl combine 1 cup confectioners sugar, 1 tsp. grated orange or lemon peel, 1 1/2 to 2 Tbsp. fresh squeezed juice.
