This is so very delicious, with the addition of lemon juice, mint, garlic, Dijon mustard, to just name a few of the ingredients. Zesty Bean Salad is a crowd pleaser!

Ingredients:

  • 1 cup cooked and drained white beans or garbanzo beans (chick peas)
  • ½ cup sweet red bell pepper or tomato, diced
  • 1/3 cup parsley, chopped
  • ¼ cup Sunkist® fresh squeezed lemon juice
  • ¼ cup Sunkist® fresh squeezed lemon juice
  • 1 medium onion, chopped
  • 3 Tbsp. chopped fresh mint
  • 1 medium garlic clove, minced
  • ½ Sunkist® lemon, zested
  • 2 tsp. sugar
  • 1 tsp. Dijon mustard
  • ¼ tsp. white pepper

Instructions: (Makes 8 servings)

  • Combine lemon juice, oil, onion, mint, garlic, lemon zest, sugar, mustard and white pepper. Stire in cooked beans and chill well. When serving stir in red bell pepper and parsley.
