  • 1 lb. dried split green peas (about 2 1/4 cups)
  • 6 cups water
  • 1 medium to large onion, chopped
  • 1 large carrot, peeled and chopped
  • 2 medium cloves garlic, quartered
  • 1 strip fresh Sunkist® orange peel (approximately 1x3 inches)
  • 3 sprigs fresh thyme (tied with string)
  • 1 large bay leaf
  • 1/4 tsp. white pepper
  • 8 oz. smoked turkey, diced (about 2 cups)
  • 1 Tbsp. liquid concentrated chicken broth flavor *
  • 3 Sunkist® oranges, juiced (1 cup)

    * Substitue 1 to 2 chicken flavored bouillon cubes, crushed.

Instructions: (Makes 6 servings)

  • Sort, rinse and drain peas. In a 4 quart saucepan, combine peas, water, onion, carrot, garlic, orange peel, thyme, bay leaf and white pepper. Bring to boil, skim any foam off surface. Reduce heat, cover and simmer until peas are very soft, about 50 to 60 minutes.
  • Remove from heat, uncover and cool slightly. Remove orange peel, thyme and bay leaf, discard. In blender, working with small batches, blend pea mixture until smooth.
  • Return to saucepan, add turkey and concentrated chicken broth, heat to boiling, stirring occasionally. Add orange juice. Heat, do not boil.

  • To Serve: Put in individual serving bowls, garnish with thin orange half cartwheel slices and a sprinkling of chopped green or white onions.
