Ingredients:

dried gremelli (twisted pasta) or penne (tube pasta)

boneless pork loin chops, thin cut

toasted sesame seed

celery, diagonally sliced

green onions, sliced diagonally

Juice of Sunkist® oranges (2/3 cup from 2 oranges)

cornstarch

Sunkist® orange, peeled and cut into quarter-cartwheel slices
Instructions: (Makes 4 servings)

Bring 3 quarts of water to a boil and cook pasta according to package directions (10 to 12 minutes for gremelli and 9 to 13 minutes for penne); drain

Meanwhile, remove any excess fat from pork
-
Cut into thin strips

In large non-stick skillet or wok, stir-fry pork in oil with sesame seed over medium-high heat until pork is just cooked through and lightly brown, about 5 minutes

Season to taste with salt and pepper

Remove pork and sesame seed; set aside

In same skillet, stir-fry celery and green onions in sesame oil until crisp-tender, about 2 to 3 minutes

Return pork and add spinach leaves to skillet

Cook briefly until spinach starts to wilt

Blend orange juice into cornstarch; add to pork mixture in skillet

Cook over medium heat, stirring until mixture starts to thicken

Add drained pasta, stirring well

Add orange slices; heat. Sprinkle with additional toasted sesame seed, if desired

Grapefruit variation:
-
Substitute juice of 1 Sunkist grapefruit (2/3 cup) and 1 Sunkist grapefruit, peeled and segmented for, orange juice and slices

Add 2 tablespoons honey with cornstarch mixture

Proceed as above
