Stuffed Mushrooms with Sunkist Key Lime and Goat Cheese Recipe

Ingredients:

• 2 Portobello mushrooms*, tips of stems trimmed flush with cap
• 1 Tbsp. Extra virgin olive oil
• 4 Sunkist® key limes, very thinly sliced, seeded (recipe requires about 24 thin slices)
• 1 5-oz. log goat cheese, cut into 8 slices
• 3 Sunkist® key limes, halved, seeded
• 1 pinch Freshly ground black pepper
  
  * 8 large brown or white button mushrooms may be used instead of Portobello mushroom quarters.
