Sunkist Creamy Lemon Curd Parfait Recipe

Try serving this in a hollowed out lemon, Sunkist Creamy Lemon Curd parfait is simply delicious and light after a great meal!

In a medium sized bowl, mix together egg yolks, sugar, ½ cup lemon juice.

Place mixture in medium-sized stainless steel saucepan over low heat.

Add the cubed butter.

Using a rubber spatula, stir continuously until the mixture begins to thicken and slightly bubble. DO NOT BOIL!

Once thickened, remove the pot from the heat and pour the curd through a strainer into a bowl.

Stir in the lemon zest and 3 tablespoons of lemon juice; allow the mixture to come to room temperature.

Slowly incorporate the cream cheese.

Divide the curd into 6 serving glasses and refrigerate before serving.

Serve with seasonal berries and sugar cookies.
