Ingredients:

4 sections of Sunkist® grapefruit, peeled and chopped

6 mint leaves

2 tsp of simple syrup (see below)

1 oz. white rum

Ice
-
Club soda
Instructions: (Makes 1 serving)

To make simple syrup: Combine 1 cup sugar and 1/2 cup water. Bring sugar and water to a simmer in a small saucepan, stirring until sugar is dissolved. Simmer 5 more minutes, then cool completely. Syrup keeps, covered and chilled, for up to 3 months. Leftover syrup can be used to sweeten lemonade and iced tea.

To make Mojito: In a cocktail shaker, muddle grapefruit with mint and simple syrup. Add rum and ice and shake well. Pour into a tall glass, top with club soda, and stir.
