This is a wonderful refreshing salad, Sunkist Grilled Chicken and Citrus Salad is a must try. The flavor combination creates a light and totally satisfying salad which tops a bed of greens, and enhances the flavor of the grilled chicken. You will be delighted with this recipe!
Ingredients:

chicken breasts

Tbsp.
extra virgin olive oil

garlic cloves, minced

Sunkist® lemon, zested and juiced

Sunkist® navel oranges, zested and segmented

cups
broccoli florets, chopped fine

½
cup
cherry tomatoes (approximately 12) halved or 1 roma tomato, diced

¼
cup
olives, pitted and halved

¼
medium red onion, sliced

½
cup
cilantro leaves
-
½
cup
basil leaves, torn

4
oz.
feta cheese, crumbled

4
cups
mixed greens
-
Fresh ground black pepper
Instructions: (Makes 4 servings)

In a medium sized bowl, toss the chicken breasts with 1 clove garlic, half the lemon and orange zest and 1 Tbsp. of olive oil.

Grill the chicken breasts until cooked through, approximately 8 minutes on each side. Allow to rest 5 minutes. Slice each breast into 5 pieces.

In a large mixing bowl, whisk together 3 Tbsp. olive oil, remaining minced garlic, lemon juice, remaining lemon and orange zest and some black pepper. Add the orange segments, cherry tomatoes, olives and red onion. Toss in the broccoli, cilantro, basil and feta cheese.

To Serve: Divide the mixed greens amongst four serving plates. Top the greens with the tossed salad. Arrange each plate with a sliced chicken breast and serve.
