Lemon Braised Chicken Thigh:

Lemon Couscous:

Sunkist® lemon zest

Israeli couscous

ground turmeric

Instructions: (Makes 12 servings)

For the Lemon Braised Chicken Thighs: Heat oil in sauté pan over medium high heat.

Season chicken thighs with salt and pepper, dredge in flour.

Working in batches, brown chicken on both sides.

After removing the chicken from the pan, turn heat to low. Add onion and diced lemon rind to the pan. Sweat the onion lemon mixture until the onions are translucent. Add the garlic and after cooking for one minute, add the cream and rosemary. Bring to a simmer.

Put the chicken in an oven-proof dish and pour the cream mixture over it. Cover the dish and place in an oven that has been pre-heated to 300° F. Cook for three hours.

For the Lemon Couscous: Place a medium-sized sauté pan over medium heat. Add the olive oil to the pan along with the diced onion and garlic. Continue to cook until translucent. Add the turmeric and continue to cook slightly.

Add the couscous to the pan and stir.

Combine the water and lemon juice and add one third to the pan stirring continuously until the liquid has evaporated. Add another third of the liquid and stir until it has evaporated.

Add the last third while stirring continuously. Stir in the butter, season with salt and pepper.

To Serve: Remove the chicken from oven. Skim excess grease from the top of the sauce. Divide the couscous onto six plates. Place one piece of chicken on top of each and finish with a little of the sauce.
