You will enjoy the taste of Sunkist Lemon Cream Cheese with Smoked Salmon and Mint. The use of mint is a delightful and unexpected surprise.

Ingredients:

1 Tbsp. Sunkist lemon juice
½ Tbsp. Sunkist lemon zest
8 oz. cream cheese (room temp)
1 tsp. turmeric
4 oz. smoked salmon, roughly chopped
24 mint leaves, whole
12 water crackers

Instructions: (Makes 12 servings)

In a medium sized bowl, add the cream cheese, lemon zest, lemon juice and turmeric. Mix until consistent; then place in a quart size resealable plastic bag.

Cut ¼ inch off the corner of the bag and squeeze enough mixture out of the bag onto each of the crackers to cover them.

Top each cracker with the salmon and garnish them with mint leaves.
