Sunkist® mandarins*, juice and zest

five spice powder

soy sauce

cloves garlic, minced

2-3 lbs. pork tenderloin (2 1-1.5 lb. pieces)

mandarins*, halved

hoisin sauce

honey

Chinese chili sauce, or to taste
*Use Sunkist® tangerines, mandarins or tangelos.
Instructions: (Makes 4 servings)

Coat large shallow roasting dish with cooking spray and preheat oven to 350 degrees.

In large bowl, combine mandarin zest and juice, five spice powder, soy sauce and garlic. Place tenderloins in bowl and coat well with sauce.

Combine hoisin sauce, honey and chili sauce in small bowl and set aside.

Place coated tenderloins in roasting dish with mandarin halves. Roast for 10 minutes.

With brush or spoon, coat tenderloins with hoisin-honey sauce and roast for an additional 20-30 minutes, basting pork and mandarins with pan juices. Pork is cooked when meat thermometer reads 160-165°F.

Remove pork from oven, let rest at least 5 minutes before slicing on the diagonal to serve with mandarin halves and pan sauce.
