This is such an easy dish to prepare and cooks quickly. Tilapia Po' Boys are delicious, the fish is breaded with seasoned flour after being dipped in lemon juice then pan fried. In addition to the lemon juice making this dish delicious, it takes the place of adding salt. This is a delicious Sunkist S’alternative™ ! For something different try serving it topped with cole slaw!

Zest of 2 Sunkist® lemons

garlic powder

onion powder

black pepper

dried dill

chopped fresh chives

milk

Sunkist® lemon juice (2 lemons)

Sliced tomato, red onion, lettuce, cheddar cheese (all optional)

Lemon caper tartar sauce (optional)

Preparation: Preheat oil in a large heavy skillet over medium heat.
Instructions: (Makes 4 servings)

In a shallow non reactive baking dish, pour lemon juice. In a second shallow baking dish, mix together flour, lemon zest, garlic powder, onion powder, pepper, dill and chives, set aside. In a third shallow baking dish stir together, milk and hot sauce.

Set up a breading station near heated skillet (lemon juice, flour mixture and milk and hot sauce). Dip Tilapia filet into lemon juice, dust in flour mixture, dip into milk mixture then finally back into the flour. Shake off excess flour and gently add breaded filet to preheated skillet. Repeat with remaining filets.

Cook filets for 5 to 7 minutes on each side. Filets are done when they flake easily with a fork. Drain on paper towels and assemble sandwiches.
