Mixed Vegetable Grill

  • Grated peel and juice of 1 Sunkist® lemon
  • 1/2 cup extra virgin olive oil
  • 2 tbs. fresh, chopped thyme, rosemary or oregano (or 2 tsp. dried herbs)
  • 1 clove garlic, pressed

Makes 6 to 8 servings:
Combine lemon juice, olive oil, herbs and garlic. To grill, coat prepared vegetables with basting sauce. Place vegetables on lightly greased grill, 4 to 6 inches above medium coals. Cook, turning frequently until vegetables are slightly browned and tender.
