Scandinavian Dilled Potatoes

  • 5 unpeeled medium potatoes (about 1-1/2 pounds), cut lengthwise into 6 wedges each
  • Boiling salted water
  • Juice of 1 Sunkist® lemon (3 tablespoons)
  • 1 medium clove garlic, minced
  • ¼ cup sliced green onions (scallions)
  • 2 tablespoons butter or margarine
  • Grated peel of 1/2 Sunkist lemon
  • ½ teaspoon dried dill weed
  • ¼ teaspoon seasoned salt

Makes 4 to 6 servings.
In a covered skillet, cook the potatoes in boiling salted water with 2 tablespoons of the lemon juice and garlic for 20 minutes, or until tender; drain well. In the same skillet, sauté the green onions in the butter with lemon peel, dill, and seasoned salt. Add potatoes and remaining 1 tablespoon of lemon juice and heat.
