Crisp Vegetable Medly
- 1 cup cauliflower, cut in bite-size florets
- 2 cups broccoli, cut in bite-size florets
- 3/4 cup carrots, sliced
- 1/2 cup celery, sliced
- 1/4 cup red onion, sliced thinly
- Grated peel and juice from 1/2 Sunkist® lemon
- 1/4 cup fresh herbs (oregano, basil, marjoram, or parsley), finely chopped
- 2 tbs. fat-free Italian salad dressing
- 1/4 tsp. black pepper, freshly ground
Makes 8 servings
Mix together all ingredients. In a covered casserole dish, cook in microwave 5 to 8 minutes,
stirring after 3 minutes.
