Creamy Grapefruit Slaw

  • 2 tablespoons Sunkist® California Star Ruby grapefruit juice
  • 1 large Sunkist® California Star Ruby grapefruit, supremed
  • 1 small shallot, minced
  • 1 tablespoon olive oil
  • 2 tablespoons plain whole milk Greek or Skyr yogurt
  • .25 teaspoon Dijon mustard
  • .5 teaspoon sugar
  • .5 medium cabbage head, cored and shredded
  • .5 avocado, diced into 1/2-inch pieces
  • Salt and pepper, to taste


Preparation: 15 minutes

  1. In a large mixing bowl, combine minced shallot and grapefruit juice. Set aside for 10 minutes.
  2. Whisk in olive oil, Greek yogurt, mustard and sugar.
  3. Season with salt and pepper.
  4. Add shredded cabbage, supremed grapefruit, avocado and dressing. Toss gently to combine.
  5. Serve as a side dish with salmon, shrimp or grilled chicken.
