Cauliflower Rice

  • 1 large Sunkist® lemon, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin seed
  • 1 pinch red chili flakes
  • .50 cup minced onion
  • 1 (14-16 oz) package fresh riced cauliflower
  • .25 teaspoon salt
  • .25 cup chopped fresh cilantro (or substitute parsley)


Preparation: 15 minutes


  1. Zest and juice the lemon into a small bowl. Set aside.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the cumin seed, chili flakes and onion; then cook, stirring until the onion is slightly tender, about 1 minute.
  4. Add the cauliflower and cook, stirring occasionally until the cauliflower is just tender, about 8 minutes.
  5. Stir in the reserved lemon juice, zest, salt and cilantro.
  6. Serve immediately.
