Pummelo Salsa Fish Tacos ingredients

  • 1 Sunkist® Pummelo, peeled, segmented, and chopped
  • .25 cup of red onion, finely diced
  • .25 cup of fresh cilantro, chopped
  • 1 small jalapeno, finely diced (optional)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 lb of white fish filets (such as cod, tilapia, or halibut)
  • 1 tbsp SZND Cilantro Lime Seasoning
  • 1 tbsp olive oil
  • 8 small corn tortillas
  • 1 avocado, sliced for garnish
  • Lime wedges for serving

Pummelo Salsa Fish Tacos

Directions

  1. In a bowl, combine the chopped Sunkist® Pummelo, red onion, cilantro, and jalapeno. Add lime juice, a pinch of salt, add pepper to taste. Toss well and set aside to let the flavors meld.
  2. Pat the fish filets dry with a paper towel. Rub them with olive oil and sprinkle both sides with SZND Cilantro Lime Seasoning.
  3. Heat a non-stick skillet over medium heat. Cook the seasoned fish filets for 3-4 minutes per side, or until the fish flakes easily with a fork. One cooked, break the fish into bite-sized pieces.
  4. While the fish is cooking, toast the tortillas in a dry skillet or directly over a gas flame until lightly charred and pliable.
  5. Place pieces of cooked fish on each tortilla. Top with the Sunkist® Pummelo salsa and garnish with avocado slices. Serve with extra lime wedges and enjoy!
