Directions
- In a bowl, combine the chopped Sunkist® Pummelo, red onion, cilantro, and jalapeno. Add lime juice, a pinch of salt, add pepper to taste. Toss well and set aside to let the flavors meld.
- Pat the fish filets dry with a paper towel. Rub them with olive oil and sprinkle both sides with SZND Cilantro Lime Seasoning.
- Heat a non-stick skillet over medium heat. Cook the seasoned fish filets for 3-4 minutes per side, or until the fish flakes easily with a fork. One cooked, break the fish into bite-sized pieces.
- While the fish is cooking, toast the tortillas in a dry skillet or directly over a gas flame until lightly charred and pliable.
- Place pieces of cooked fish on each tortilla. Top with the Sunkist® Pummelo salsa and garnish with avocado slices. Serve with extra lime wedges and enjoy!
