Spinach & Apple Salad with Warm Meyer Lemon–Bacon Vinaigrette

  • 6 cups baby spinach
  • 1 apple, sliced
  • 0.5 cup thinly sliced white onion
  • 0.34 cup freshly squeezed Sunkist® Meyer lemon juice
  • 2 teaspoons Dijon mustard
  • 2 tablespoons sugar
  • 0.5 teaspoon coarsely ground black pepper
  • 0.25 teaspoon salt
  • 2 tablespoons extra-virgin olive oil
  • 0.25 cup finely diced raw bacon
  • 2 teaspoons minced fresh garlic

Time: 20 minutes

Directions
  1. Place spinach, apple and onion in a large, heat-proof bowl and refrigerate until ready to dress salad.
  2. In a small bowl, whisk together the freshly squeezed Sunkist® Meyer lemon juice, mustard, sugar, pepper, salt and olive oil. Set vinaigrette aside.
  3. In a small nonstick pan, cook the bacon over medium-high heat until three-quarters done, about 2 to 3 minutes.
  4. Add garlic and stir for about 30 seconds, making sure not to brown the garlic.
  5. Add the reserved vinaigrette to the hot pan.
  6. Immediately remove from heat and pour over reserved spinach mixture. Toss until salad is well coated with dressing.
