Try this delicious recipe with our Lemon Herb Mayonnaise or our egg substitute Lemon Mayonnaise
Ingredients:

small baby artichokes, trimmed 1 inch from top, stems trimmed flush, any small leaves removed from bottom, thorny leaf ends removed

Tbsp.
freshly squeezed Sunkist® lemon juice

Extra virgin olive oil, to taste

Fresh ground black pepper, to taste
Instructions: (Makes 4 servings)

Wash and trim artichokes, brush all cut surfaces with lemon juice.

Boil or steam in large pot until tender, 30-40 minutes.

Remove with tongs and drain, upside-down, until cool enough to handle.

Spread leaves slightly, remove center leaves and spines at the center.

Cut in halves and arrange on plates.

Drizzle with olive oil and black pepper.

Serve with small individual bowls (2 Tbs. each) of lemon mayonnaise.
