Room temperature citrus will yield more juice than those that are chilled. Chicken Breasts with Tangerines and Thyme uses tangerines which are a great tasty alternative to oranges. Why not give this tangerine chicken recipe a try? It makes for a delectable main dish.
Ingredients:

medium Sunkist® tangerines (about 1 pound per 4 tangerines)

boneless, skinless half chicken breasts (about 1 pound per 4 half breasts)

each salt and white pepper

olive oil

butter or margarine

Italian brown or white mushrooms, sliced (about 1.5 cups per 1/4 pound)

fresh thyme leaves (or 1/2 teaspoon dry thyme leaves per 1 1/2 teaspoons fresh thyme), crushed

triple sec or other orange-flavored liqueur

reduced sodium (1/3 less) chicken broth

green onion, thinly sliced diagonally
Instructions: (Makes 4 servings)

Grate peel from 1 tangerine to equal 1/2 teaspoon peel.

Juice 2 tangerines to equal 1/3 cup juice.

Hand peel and segment remaining 2 tangerines, removing any seeds, if necessary; set aside.

Rinse chicken breasts and pat dry.

Lightly sprinkle both sides with salt and pepper. In large non-stick skillet sprayed with no stick cooking spray, heat oil over medium-high heat.

Brown chicken for 5 minutes on each side or until just cooked through.

Remove chicken.

In skillet drippings and butter, sauté mushrooms with thyme and grated tangerine peel for 2 to 3 minutes, stirring constantly.

Add tangerine juice and orange liqueur.

Sir chicken broth into cornstarch and add to skillet.

Bring to boil over medium heat, stirring until mixture starts to thicken.

Return chicken and stir in tangerine segments and green onion.

Heat, stirring occasionally.

Garnish with fresh thyme leaves, if desired.
