A light, healthy way to enjoy shrimp. Citrus Scampi is a great summer dish; garlic is paired with sunny citrus in this special shrimp entree. For a change of pace try serving over linguine!
Ingredients:

fresh Sunkist® orange

fresh Sunkist® pummelo (or grapefruit)

raw, large shrimp, peeled, deveined, tails on

butter

Tbsp.
olive oil

garlic, minced

baby spinach leaves (can also use rice)
Instructions: (Makes 4 servings)

Take 5 shrimp and butterfly them, slicing down the back and almost in half. This will make the shrimp curl when cooking.

Melt 1 tablespoon butter and 1 tablespoon olive oil in skillet over medium heat. Stir in ½ teaspoon garlic and shrimp.

Cook shrimp 4 - 5 minutes until they turn pink and tails curl.

Add 3 of each - Sunkist fresh orange, fresh lemon and fresh pummelo segments to pan, and stir gently to heat through.

Place 2 cups baby spinach leaves on serving plate. Arrange shrimp on top of spinach. Pour garlic butter with Sunkist fresh orange, lemon and pummelo segments over shrimp.

Serve immediately.
