Fava-lafels are made using the Fava bean which is often considered the tastiest bean around. These flavorful rounds are well seasoned then fried to a golden brown. These are a flavorful Sunkist S’alternative™ using lemon to replace any added salt. Try serving ia a pita with chopped lettuce and tomato!
Ingredients:

lbs.
fresh Fava beans in their pods or 1 lb. defrosted fava beans, skinned

bunch fresh cilantro

bunch fresh mint or 3 tbs. dried (split into two portions)

tsp.
cayenne pepper

tsp.
ground cumin

½
tsp.
red chili flakes

Sunkist® lemons, zested and juiced

tsp.
flour
-
Vegetable oil (for frying)

Freshly ground black pepper

cup
Greek yogurt
-
1
tsp.
honey
Instructions: (Makes 4 servings)

If using fresh Fava beans, shell and skin them, be sure if using frozen that they are defrosted.

In a food processor, blend the Fava beans with cilantro, half of the mint, remaining spices, lemon zest and 1 tbsp. lemon juice.

Add flour and pulse a bit longer, avoid making the mixture too dry. Dough should resemble falafel mix.

Heat oil in saucepan for frying. Scoop about one cereal spoonful of the fava mix and roll into balls. Place on wax paper so they don't stick to each other.

When done rolling, and oil is hot enough, fry until crispy and brown.

In a small serving bowl, mix yogurt, remaining lemon juice and the rest of the mint (chopped). Add honey, and pepper to taste. Serve Fava-lafels on a plate surrounding the yougurt.
