Instructions: (Makes 4 servings)

• In large non-stick skillet, brown chicken on both sides in hot oil (8-10 minutes). Remove chicken.
• Sauté onion and garlic in pan drippings over medium heat, stirring constantly, until onions are just softened.
• Stir in paprika, ginger and pepper; cook 1 minute longer.
• Add broth and stir to loosen any brown bits on bottom of skillet.
• With spoon scrape preserved lemon peel clean, reserving only the peel. Add preserved peel to skillet along with the chicken; bring to boil.
• Reduce heat; cover and simmer for 20 minutes.
• Add olives and half the cilantro.
• Cook, uncovered, for 5 minutes longer, occasionally spooning cooking liquid over chicken.
• Remove chicken, olives and lemon to serving plate and keep warm.
• Bring cooking liquid to a boil and cook to reduce by about one third. Salt to taste.
• Spoon sauce with onions over chicken.
• Sprinkle with remaining cilantro.
