Easy to prepare, Broiled Sunkist Grapefruit with Frozen Yogurt and Vanilla Meringues is a great dessert that is light, refreshing and delicious!

Ingredients:

  • 2 Sunkist® grapefruits, cut in half
  • 2 Tbsp. sugar
  • 1/2 tsp. vanilla extract
  • 1 pint nonfat or regular frozen vanilla yogurt, softened
  • 8 fat-free vanilla meringue cookies (store bought)

  • Preparation: Heat broiler with rack set 4 inches from heat.

Instructions: (Makes 4 servings)

  • With a pairing knife, loosen grapefruit segments from membranes and pith. Sprinkle evenly with sugar mixture.
  • Place on foil lined baking sheet and broil, watching closely until tops are lightly browned, about 4 to 5 minutes.

  • To Serve: Place each grapefruit half onto individual dessert plates, top with yogurt and meringue cookies.
