Your family and friends with love this dish. Cara Cara Cabbage Salad with Skewered Shrimp is great, the cabbage salad is wonderful with the fresh sweet taste of orange and parmesan cheese.


  • 1 1/2 lbs. large shrimp, peeled and deveined
  • 1 Sunkist® Cara Cara orange, juice and zest
  • 1 Tbsp. olive oil
  • Salt and freshly ground pepper, to taste

  • Cabbage Salad:
  • 1/2 large cabbage, thinly sliced
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup almonds, toasted and coarsely chopped
  • 1 Sunkist® Cara Cara orange, peeled, segmented (segments sliced in half)

  • Dressing:
  • 1/4 cup olive oil
  • 1 Sunkist® lemon, juiced
  • 1 tsp. smoked paprika
  • Freshly ground pepper, to taste

  • Preparation: Preheat oven to broil.

Instructions: (Makes 4 servings)

  • Skewer shrimp and place in glass baking dish. Mix together orange juice and zest, 1 Tbsp. olive oil, salt and pepper. Pour over skewers, cover and refrigerate for 20 minutes.
  • In a large bowl mix together cabbage, parmesan and almonds. In a separate bowl mix 1/4 olive oil, lemon juice, pepper and smoked paprika.
  • Remove shrimp from marinade. Broil on sheet pan until no longer pink.
  • Add orange segments to cabbage mixture, toss with dressing and serve with skewered shrimp.
