A light, healthy way to enjoy shrimp. Citrus Scampi is a great summer dish; garlic is paired with sunny citrus in this special shrimp entree. For a change of pace try serving over linguine!


  • 12 segments fresh Sunkist® orange
  • 12 segments fresh Sunkist® lemon
  • 12 segments fresh Sunkist® pummelo (or grapefruit)
  • 20 raw, large shrimp, peeled, deveined, tails on
  • 4 Tbsp. butter
  • 4 Tbsp. olive oil
  • 2 tsp. garlic, minced
  • 8 cups baby spinach leaves (can also use rice)

Instructions: (Makes 4 servings)

  • Take 5 shrimp and butterfly them, slicing down the back and almost in half. This will make the shrimp curl when cooking.
  • Melt 1 tablespoon butter and 1 tablespoon olive oil in skillet over medium heat. Stir in ½ teaspoon garlic and shrimp.
  • Cook shrimp 4 - 5 minutes until they turn pink and tails curl.
  • Add 3 of each - Sunkist fresh orange, fresh lemon and fresh pummelo segments to pan, and stir gently to heat through.
  • Place 2 cups baby spinach leaves on serving plate. Arrange shrimp on top of spinach. Pour garlic butter with Sunkist fresh orange, lemon and pummelo segments over shrimp.
  • Serve immediately.
