A healthy and tasty chicken salad with a fruity twist using the sweet and seedless gold nugget mandarin. Curry Chicken and Sunkist Gold Nugget Mandarin Cashew Salad in Whole Wheat Pita is as good looking as it is tasty! The curry flavor goes great with the fruit and the roasted cashews add a nice texture and flavor.

Ingredients:

  • 1 cup plain whole yogurt
  • 1 tsp. curry powder
  • 1 Sunkist® lemon, juiced
  • 2 roasted chicken breasts, large diced
  • 1 cup red cabbage, shredded
  • 2 green onions, chopped
  • 1/2 cup celery, small diced
  • 1/2 cup roasted cashews
  • 3 Sunkist® gold nugget mandarins, peeled and sectioned
  • Salt and black pepper
  • 2 whole wheat pitas, halved

Instructions: (Makes 4 servings)

  • In a large bowl, mix together the yogurt, curry powder and the lemon juice. Mix in the chicken, cabbage, green onions, celery and cashews. Add the gold nugget mandarin sections and season to taste with salt and pepper. Divide the salad amongst the four halved pitas and serve.
