Wait until you taste this, you are going to love it! Grapefruit Upside-Down Cake is absolutey delicious and easy to make. You will make this over and over again!


  • 1/3 cup butter or margarine
  • 1/2 cup packed brown sugar
  • 1 Sunkist® grapefruit, peeled and sliced into 6 cartwheel slices, pat dry
  • 1/3 cup pecan halves
  • 1 package (about 16 oz.) pound cake mix
  • 2 eggs
  • Milk or water
  • 1 tsp. ground cinnamon
  • 1/8 tsp. ground cloves
  • 2 Tbsp. Sunkist® fresh grated grapefruit peel

  • Whipped Topping:
  • 1 cup whipping cream*
  • 2 Tbsp. confectioners sugar
  • 2 tsp. Sunkist® fresh grated grapefruit peel

    * Substitute 1 envelope whipped topping mix for 1 cup whipping cream and sugar. Prepare topping according to directions, blending in grapefruit peel.

  • Preparation: Preheat oven to 325 degrees.

Instructions: (Makes 9 servings)

  • Melt butter in 9-inch square baking pan while oven is preheating to 325 degrees. Remove baking pan from oven, sprinkle brown sugar evenly over melted butter. Arrange grapefruit cartwheels and pecan halves over sugar.
  • In a large bowl prepare pound cake mix with eggs and milk or water following package directions, add in cinnamon and cloves, stir in grapefruit peel. Pour batter over grapefruit.
  • Bake 55 to 60 minutes until toothpick inserted in center comes out clean. Run knife around insides of baking pan. Invert onto a serving platter and serve with whipped topping.
  • Whipped Topping: In a bowl whip cream with confectioners sugar, blend in grapefruit peel. Chill 10 to 15 minutes and serve.
