One way to put a tasty meal on the table is to serve Grilled Sunkist Lemon Planks with Salmon, Green Tea & Jasmine Oils.

Ingredients:

  • Sunkist Lemon Planks
    • 2 Sunkist® lemons
    • 2 tsp. extra virgin olive oil
    • 1 pinch ground black pepper

  • Green Tea Oil
    • 1/4 cup olive oil
    • 1/4 tsp. green tea powder

  • Jasmine Tea Oil
    • 1/4 virgin olive oil
    • 1/2 tsp. jasmine tea powder

  • Assembly
    • 24 salmon slices, ¼ oz each – about ½” x 1” x ¼” thick
    • as needed kosher salt
    • 1/4 cup Greek style yogurt
    • 1 Tbsp. fried shallots
    • 1 Tbsp. Korean red pepper threads or crushed red pepper

Instructions: (Makes 12 servings)

  • For the Sunkist Lemon Planks:
    • Wash and slice lemons end to end into 6 equally thick slices, then trim rounded side of the two end pieces; or, use a Sunkist Commercial Sectionizer using a 7 slice blade plunger and blade slicer.
    • Toss lemons with olive oil and pepper.
    • Preheat grill on highest heat, grill lemons on one side creating dark brown grill markings.
    • Remove and place in single layer on baking sheet to cool.

  • For the Green Tea Olive Oil:
    • Whisk together, if there are lumps, strain.

  • For the Jasmine Tea Oil:
    • Whisk together.

  • For the Assembly:
    • Preheat broiler on the highest setting for at least 10 minutes.
    • Arrange two seasoned salmon slices on top of each lemon plank, drizzle with green tea oil.
    • Broil until salmon slices are cooked through, about 2 minutes.
    • Transfer to plate, garnish with small dollop of yogurt, fried shallots and red peppers.
    • Drizzle plate with both tea oils.
