Absolutely delicious! Herbed Biscuit Squares are wonderful warm with butter or use to make these wonderful sandwiches. Everyone will love them

Ingredients:

  • 2 ½ cups baking mix
  • 2 Tbsp. chopped parsley
  • 1 Tbsp. chopped dill weed or tarragon leaves
  • 1 Sunkist® lemon, grated zest
  • 2/3 cup low fat milk
  • ¼ cup reduced fat mayonnaise
  • 1 Tbsp. Dijon mustard
  • 1 package (6 to 8 oz.) thin sliced ham, cut in 2 inch squares
  • 1 package (6 oz.) Swiss cheese, cut in 2 inch squares

  • Preparation: Preheat oven to 450 degrees.

Instructions: (Makes 12 servings)

  • In a large bowl combine baking mix, parsley, dill and lemon zest. Add milk and beat for 30 seconds. Place on board dusted with additional baking mix, roll dough in baking mix and shape into ball. Knead 10 times. Pat into 8x6 inch rectangle, about 1/2 inch thick.
  • Cut into twelve 2 inch squares. Place 2 inches apart on ungreased cookie sheet. Bake at 450 degrees for 8 to 10 minutes or until lightly browned, cool
  • To make sandwiches, slice each biscuit in half. In a small bowl, combine mayonnaise and mustard, spread a small amount on each biscuit half. Divide ham and cheese squares and place on bottom half of each biscuit, replace tops.
  • Sandiwches can be served at room temperature or warmed in the microwave oven at high power for 1 minute or until biscuit is warmend and cheese just starts to melt.
