This delicious Lemon Vinaigrette is not just for salads, try serving over chicken or pork!


  • 1 shallot, minced
  • 1/2 cup fresh-squeezed Sunkist® lemon juice
  • 1 Tbsp. dijon mustard
  • 3/4 cup extra virgin olive oil
  • 1 Tbsp. salt
  • fresh ground black pepper

Instructions: (Makes 4 servings)

  • Whisk together the shallot, lemon juice, mustard, salt and pepper in a small bowl.
  • Continue whisking while slowly adding the olive oil in a thin stream.
  • Check for seasoning and store in the refrigerator for up to one week.
  • Shake well before using.
  • Yields approximately 1 1/4 cups.
