Chinese noodles tossed in spicy chili oil with Moro oranges and chicken. Moro Orange Chicken Noodles is colorful in addition to being very tasty!

Ingredients:

  • 10 Tbsp. freshly squeezed Sunkist® moro orange juice
  • 10 oz. chicken breast, thinly sliced
  • 1 Tbsp. spicy chili oil
  • 2 lbs. cooked Chinese noodles
  • 2 Tbsp. fresh Sunkist® moro orange peel, finely grated
  • 2 Tbsp. peanut oil
  • 1 Tbsp. cornstarch
  • 5 oz. canned bamboo shoots, sliced, drained
  • 4 oz. spinach leaves, chopped
  • 1 Tbsp. soy sauce
  • 2 Tbsp. Chinese rice wine (mirin)
  • 1 tsp. salt
  • 1 tsp. sugar
  • 10 Sunkist® moro orange sections, cut in half
  • 1 Tbsp. cilantro, chopped

Instructions: (Makes 6 servings)

  • Place 1/2 cup (8 tablespoons) Sunkist fresh-squeezed Moro orange juice in plastic zip-top bag with chicken strips. Marinate in refrigerator for 30 minutes.
  • Heat large wok or sauté pan over high heat and add spicy chili oil. When hot, add cooked noodles and Sunkist Moro orange peel and toss with hot oil to coat.
  • Stir-fry 3 - 4 minutes until lightly browned and crispy. Remove noodles to serving platter. Keep warm.
  • Add peanut oil to wok and heat.
  • Remove chicken from marinade, drain, and dust with 2 teaspoons cornstarch.
  • Add chicken, bamboo shoots and spinach to wok and stir-fry for about 4 minutes. Combine remaining 2 tablespoons Moro orange juice, soy sauce and Chinese rice wine, salt, sugar, and remaining 1 teaspoon cornstarch, blend until cornstarch is dissolved to make sauce.
  • Add sauce to wok, stir and cook an additional 3 - 4 minutes, or until chicken is done and sauce thickens. Add Moro orange sections and heat through.
  • Pour cooked chicken mixture over reserved noodles and sprinkle with cilantro. Serve immediately.
  • NOTES : Moro oranges are also referred to as blood oranges because of their deep red colored flesh. When stir-frying at high temperatures, have all ingredients prepared and ready to go before starting.
