Beautiful in addition to being delicious. This Orange Ambrosia Cake Roll is truly the food of the gods! It's light, easy to prepare and has a wonderful flavor.

Ingredients:

  • 1 cup cake flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 3 eggs
  • 1 cup sugar
  • 1/2 Sunkist® orange, grated peel
  • 1/3 cup Sunkist® fresh squeezed orange juice

  • Orange Filling and Glaze
  • 3/4 cup sugar
  • 1 Tbsp. corn starch
  • 1 cup Sunkist® fresh squeezed orange juice
  • 4 egg yolks, beaten
  • 1 cup heavy cream or whipping cream, whipped
  • 1 Sunkist® orange, grated peel
  • 1/4 cup shredded or flaked coconut

  • Preparation: Preheat oven to 375 degrees.

Instructions: (Makes 10 servings)

  • Line a 15 1/2 x 10 1/2 x 1 inch jellyroll pan with greased aluminum foil. Sift together the cake flour, baking powder and salt.
  • In a large bowl with an electric mixer beat the eggs well. Gradually add the sugar and orange juice, beating until well blended. Gradually add the dry ingredients, beating just until smooth. Stir in the orange peel.
  • Pour the batter into the prepared pan. Bake at 375 degrees for 13 to 15 minutes. Cool for 5 minutes. Invert the cake onto a large wax paper lined cookie sheet, carefully remove the foil. Roll up the cake with wax paper from the narrow end, cool completely on wire rack.
  • Orange Fillling and Glaze In a saucepan combine the sugar and cornstarch. Gradually blend in the orange juice and beaten egg yolks. Bring to a boil over medium heat, stirring until thickened. Cool thoroughly. Reserve 1/2 cup of the cooled filling for the glaze. Gently fold the whipped cream and orange peel into the remaining 1 cup of filling.
  • To Assemble: Unroll the cake and spread it with the filling. Reroll without the wax paper and place on a serving platter. Spread the top with the reserved glaze and sprinkle with the coconut. Chill for a least 1 hour before serving,Garnish with orange half cartwheel slices and well drained maraschino cherries if desired.
