You are going to love this dish! Orange Couscous Fruit Salad tastes like a comfort food of fruit, pasta and a delicious dressing using yogurt as the base.


  • 1/2 Sunkist® orange, grated zest
  • 1 1/2 cups fresh squeezed Sunkist® orange juice
  • 1 1/4 cups couscous
  • 1 1/2 cups Sunkist® green seedless grapes, cut in half if large.
  • 1 Sunkist® orange, peeled, cut in bite size pieces
  • 1 nectarine or peach, unpeeled, cut in bite size pieces or 2 plums, sliced
  • 1 carton (8 oz.) lowfat vanilla yogurt
  • 1 Tbsp. brown sugar
  • 1/2 tsp. ground cinnamon

Instructions: (Makes 6 servings)

  • In medium saucepan, bring orange zest and juice to a boil, stir in couscous. Cover and remove from heat. Let stand 5 minutes, stir with fork to fluff up mixture. Remove to large bowl and cool.
  • Add fruit, mix yogurt well with brown sugar and cinnamon, add to couscous and fruit tossing lightly. Chill, if desired.
