If you like rice pudding you are going to love this! Orange Rice Pudding is wonderful with the additon of oranges, juice and zest. And even better its very easy to prepare.

Ingredients:

  • 2 cups water
  • 1 cup uncooked rice
  • 1 Tbsp. Sunkist® freshly grated zest
  • 1 Tbsp. sugar
  • ½ cup raisins
  • ¼ cup Sunkist® fresh squeezed navel orange juice
  • 1 package (3 3/4 oz.) vanilla instant pudding and pie filling
  • 2 cups cold milk
  • 2 Sunkist® navel oranges, peeled, cut in bite size pieces

Instructions: (Makes 10 servings)

  • In large saucepan, combine water, rice, orange zest and sugar, bring to boil. Reduce heat, cook covered 20 minutes or until liquid is absorbed. Spoon rice mixture into large bowl, cool 10 minutes.

  • Meanwhile, in small saucepan, simmer raisins in orange juice 1 minute. Prepare pudding with milk according to package directions. Combine rice, pudding, raisin mixture and oranges. Serve warm or cold.
