Key limes add a touch of Caribbean flavor, Sunkist Key Lime Mousse Pie is light and delicious.
3 Tbsp. cold water
1 envelope gelatin powder
2 cups lime or vanilla yogurt
1/3 cup sugar
1/3 cup fresh Sunkist
key lime juice (about 12 limes)
Finely grated zest of 2 Sunkist
1 cup heavy cream, whipped to soft peaks
1 prepared 9” graham cracker piecrust
Additional key lime zest, for garnish
Additional key lime slices, for garnish
Pour cold water into small metal bowl.
Sprinkle gelatin over.
Let stand until gelatin softens, about 10 minutes.
Whisk yogurt, sugar, lime juice and zest until creamy, in medium bowl.
Gently fold lime mixture into whipped cream.
Set bowl of gelatin in saucepan of barely simmering water; whisk until gelatin dissolves, about 1 minute.
Whisk into creamy lime mixture.
Pour mixture into piecrust.
Garnish with additional lime zest and lime slices.
Chill for at least 4 hours, up to overnight.
