Ingredients:

red snapper filets, 3/4 inch thick, fresh or frozen

SunkistĀ® orange-grated peel

cups
freshly squeezed SunkistĀ® orange juice, divided

cups
bottled teriyaki sauce/marinade

1 ½
tsp.
freshly squeezed lemon juice

Sunkist® oranges
peeled, slice into thick cartwheels (see recipe)

butter or margarine
Instructions: (Makes 4 servings)

Thaw fish if frozen; place in plastic bag or glass dish.

Marinate for 30 minutes in mixture of orange peel, 2 tbs. orange juice and teriyaki marinade. Wipe fish partially dry with paper towel; reserve 3 tbs. marinade.

Arrange filets on cold broiler pan, place in cold broiler, 3 to 5 inches from heat source. Broil 12 to 15 minutes, or until fish flakes easily with a fork.

Meanwhile, melt margarine in large skillet; add remaining orange juice, 3 tbs. reserved marinade and lemon juice. Cook over high heat 5 to 8 minutes until reduced by about half, and thickened.

Add orange slices; heat until warm. Place fish on warm platter; garnish each serving with orange cartwheels and pour sauce over all.
