This wonderful Zesty Fish 'N' Vegetable Chowder with zucchini, mushrooms and onion is delicious. The fresh taste of lemon adds the zest. The addition of curly or spiral pasta adds a "twist" to the usual chowder!


  • 2 (14 oz. each) chicken broth
  • 1 medium onion, finely chopped
  • 1/2 Sunkist® lemon, juice and zest
  • 1 bay leaf
  • 1/4 tsp. dried basil leaves, crushed
  • 1 lb. frozen cod, sole or haddock
  • 1 can (about 16 oz.) whole tomatoes, undrained
  • 1 can (8 oz.) tomato sauce
  • 1 1/2 cups curly or spiral pasta
  • 2 medium zucchini, unpeeled, thinly sliced
  • 1/4 lb. mushrooms, sliced
  • 1/2 Sunkist® lemon, unpeeled, sliced in half cartwheel slices

Instructions: (Makes 4 servings)

  • In a large saucepan, combine broth, onion, lemon juice, bay leaf and basil, bring to boil. Add frozen fish, reduce heat and simmer covered for 15 minutes, or until fish flakes easily with fork. Remove fish, cut into bite size pieces and set aside.
  • To stock, add undrained tomatoes and tomato sauce, bring to a boil. Add pasta, boil for 5 minutes stirring occasionally. Reduce heat, add zucchini and mushrooms, simmer for 4 to 5 minutes. Add cooked fish, lemon half cartwheel slices and lemon zest and simmer until heated through. Remove bay leaf and serve.
