Preparation: Preheat oven to 400 degrees.
Instructions: (Makes 4 servings)

Mix the first seven ingredients together, cut excess skin and fat off of the chicken pieces. Massage the rub/marinade onto the chicken putting most of it under the skin (you will be flavoring the meat instead of the skin). Refrigerate for several hours or overnight.

Place chicken in oven and bake for 25-30 minutes. For even better flavor take chicken out of oven after 15 minutes and finish off on the grill.

Take remaing drippings and add the cornstarch. Simmer until thickened and then add additional zest and juice.

To Serve: Drizzle the chicken with the sauce and enjoy your sodium-free, yet super flavorful dinner!
