Orange Peel Marmalade

Directions
- Wash and peel the oranges. Drain the orange peel and remove the white pith from the orange peel.
- Cut the orange peel into strips.
- Soak the dried Chen Pi in cold water until soft, use a knife to remove the white pith.
- Cut the dried Chen Pi into strips.
- Boil orange peel and Chen Pi strips for 5 minutes, then drain.
- Add water, rock sugar, orange peel, and Chen Pi strips back into the pot and bring to a boil, then reduce the heat.
- Stir constantly to prevent burning, until the water has reduced by half, then turn off the heat.
- Pour the mixture into a jar and let it cool before serving.
