Grapefruit Grain Salad ingredients

  • 1 cup dry couscous
  • 1 cup water 
  • .5 tsp sea salt
  • 8 oz sugar peas, thinly sliced
  • 2 oz feta cheese, plus extra for garnish
  • 2.5 tbsp chopped mint, plus extra for garnish
  • 3 supremed California Star Ruby grapefruits

Red Wine Vinaigrette ingredients

  • 2 tbs red wine vinegar
  • .5 tsp dijon mustard
  • 1 garlic clove, minced
  • .5 tsp agave
  • 4 tbsp olive oil
  • Salt and pepper, to taste

Grapefruit Grain Salad


  1. Begin by preparing the couscous. Place the water and salt into a saucepan and set over medium heat. Once the water begins to boil, mix in the couscous, cover with a lid, and remove from heat.
  2. Let the couscous rest for 5 minutes, or until all the water has been absorbed. Remove the lid, and gently fluff with a fork. Let cool.
  3. To a large bowl add the cooled couscous, sugar peas, feta cheese, and mint. Drizzle the dressing over the top and toss together until everything is well coated.
  4. Add the grapefruit segments, and gently toss a few more times to incorporate. Garnish salad with a bit more mint and feta cheese and enjoy.

Red Wine Vinaigrette


  1. For the dressing, add the red wine vinegar, mustard, garlic, agave, and a pinch of salt and pepper to a small bowl. Whisk everything together to combine.
  2. While whisking, slowly pour in the olive oil. Continue whisking until all of the olive oil has been added. Taste, and add additional salt or pepper as needed.
