Grapefruit Panzanella Salad

Number of servings


  • 4 cups 1-inch-cubed bread (Italian Style or Rustic French)
  • 0.33 cup plus 2 tablespoons olive oil
  • 2 teaspoons fresh garlic, minced
  • 3 tablespoons grated parmesan cheese
  • 1 Sunkist® grapefruit
  • 2 teaspoons Dijon mustard
  • 3 tablespoons red wine vinegar
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon fresh ground black pepper
  • 0.5 cup thinly sliced red onion
  • 1 large tomato, diced
  • 1 large fresh mozzarella ball, diced
  • 2 cups greens (arugula, baby spinach, etc.)
  • 0.25 cup coarsely chopped fresh basil


Time: 20 minutes


  1. Preheat oven to 475°F.
  2. In a large bowl, toss the bread with 2 tablespoons of olive oil, garlic and parmesan cheese.
  3. Spread on a baking sheet and place in the oven for about 8 minutes or until lightly crisped and golden. Remove from oven.
  4. While the bread cools, peel the Sunkist® citrus fruit and then dice. Set aside.
  5. In a large bowl, whisk together the mustard, vinegar, 1/3 cup of olive oil, salt and pepper.
  6. Add Sunkist® grapefruit, onion, tomato, fresh mozzarella, greens, basil and toasted bread.
  7. Toss together to coat ingredients and serve.
