Lemon Pasta Salad ingredients

  • 1 pound pasta of choice
  • 1 cup of cucumber, diced
  • .5 cup Kalamata olives, cut in half
  • 1 bell pepper, sliced
  • 1 15oz can chickpeas, drained and rinsed
  • .5 cup of mozzarella cheese, shredded
  • .25 cup of fresh parsley, chopped

Vinaigrette ingredients

  • 2 Sunkist® lemons, for juice and zest
  • .5 cup of fresh Sunkist® lemon juice
  • .33 cup of olive oil
  • 1 pinch of salt

Lemon Pasta Salad

Directions

  1. Prepare pasta according to package directions. Drain thoroughly and set aside.
  2. Combine pasta, cucumber, olives, mozzarella cheese, bell peppers, chickpeas, and fresh parsley. Stir in vinaigrette (recipe below).
  3. Refrigerate for 10 minutes and serve.

  1. In a small bowl, whisk together olive oil, lemon zest, lemon juice and salt. Set aside.
