Crust ingredients

  • 1.333 cups graham cracker crumbs
  • 6 tablespoons melted butter

Filling ingredients

  • 14 oz can sweetened condensed milk
  • 1 cup low-fat, half and half milk
  • 3 Sunkist® lemons, juiced and zested

Topping ingredients

  • 1.5 cups reduced sugar whipped topping
  • 3 drops purple food coloring
  • 3 drops blue food coloring
  • Optional: silver sprinkles and lemon slices for garnish

Crust

Directions

  1. Add the graham cracker crumbs to a bowl along with the melted butter.
  2. Stir to combine and press the crumb mixture into the bottom of an 8-inch tart pan and up the sides of the pan.
  3. Place in the refrigerator until ready to use.

Filling

Directions

  1. In a large bowl, add in the sweetened condensed milk, half and half, and the juice and zest of 3 lemons.
  2. Using a hand mixer or standing mixer, beat the mixture on medium-high speed for about 3 minutes, or until the filling becomes slightly thick and glossy.
  3. Pour the filling into the prepared crust and refrigerate for about 6 hours or overnight.

Topping

Directions

  1. Once the tart has thickened, spread the whipped topping on top.
  2. To make the galaxy pattern, add 3 drops of blue food coloring and 3 drops of purple food coloring on the whipped topping and swirl the colors together with a knife.
  3. Continue until the entire tart is covered with this pattern.
  4. Add a few silver sprinkles and garnish with lemon slices. 
  5. Slice, serve, and enjoy!
